Make it shine

Thaw overnight in the refrigerator. Important: remove from the vacuum seal bag before thawing, this allows the fish to breathe and gives you a much better result. Pat the fillets dry and season with salt and pepper. Sear in a hot, lightly oiled skillet until beautifully golden, then finish with butter, lemon, and fresh herbs. You can also roast until opaque and flaky. Cook to 145°F at the thickest point.
