Recommended Cooking: Thaw overnight in the refrigerator. Important: remove from the plastic or vacuum seal bag before thawing — this allows the meat to breathe and gives you a much better result. Season generously with salt and pepper. Sear over high heat and cook to 130°F for medium-rare. Rest 5 minutes before serving.
