Recommended Cooking: Thaw overnight in the refrigerator. Important: remove from the plastic or vacuum seal bag before thawing — this allows the meat to breathe and gives you a much better result.

Reverse Sear (recommended): Season generously and place on a rack in a 275°F oven until internal temp reaches 120°F. Pull and rest while you heat a cast iron skillet to ripping hot. Sear 2-3 minutes per side in butter until deeply golden. Rest 8 minutes. Target 130°F for medium-rare.

Grill: Bring to room temperature and season well. Grill over high heat 5-6 minutes per side for medium rare, depending on thickness. Rest 8 minutes before serving — the bone-in cut stays juicy and flavorful right off the grill.
