Recommended Cooking: Thaw overnight in the refrigerator. Important: remove from the plastic or vacuum seal bag before thawing — this allows the meat to breathe and gives you a much better result. Season well with salt and pepper. Sear over medium-high to high heat 3-4 minutes per side. Target 130°F for medium-rare. Always slice against the grain for maximum tenderness.
