Recommended Cooking: Bring to room temperature. Season generously. Sear over HIGH heat 3-4 minutes per side. Hanger steak loves a hot pan. Do NOT overcook. Best served medium-rare to medium. Target internal temp: 130-135°F. Rest 5 minutes and slice against the grain.
