Sear them in butter for a stunning golden crust, wrap them in bacon, or feature them as the star of any seafood dish. With scallops this size, every bite is an experience.

Recommended Cooking: Thaw overnight in the refrigerator. Important: remove from the plastic or vacuum seal bag before thawing — this allows the scallops to breathe and gives you a much better result. Pat completely dry before cooking for the best sear.

Pan Sear: Pat scallops completely dry and season with salt and pepper. Heat a cast iron or stainless skillet over high heat until smoking. Add butter and oil, place scallops flat-side down and do not move. Sear 2 minutes until a deep golden crust forms, flip and cook 1-2 minutes more. Finish with a squeeze of lemon.

Bacon Wrapped: Wrap each scallop with half a strip of bacon and secure with a toothpick. Season and bake at 425°F for 15-18 minutes until bacon is crispy and scallops are cooked through. Broil the last 2 minutes for extra crispiness.

Garlic Butter Skillet: Sear as above, then add garlic, white wine, and butter to the pan. Baste scallops and serve over pasta or risotto for a restaurant-quality dinner at home.
