Recommended Cooking: Thaw overnight in the refrigerator. Important: remove from the plastic or vacuum seal bag before thawing — this allows the meat to breathe and gives you a much better result.

Reverse Sear (recommended): Season generously and place on a rack in a 275°F oven for 25-30 minutes until internal temp reaches 125°F. Pull and rest while you heat a cast iron skillet to ripping hot. Sear 2 minutes per side in butter until deeply golden. Rest 5 minutes and serve.

Pan Sear + Oven Finish: Bring to room temperature and season well. Sear over high heat 4-5 minutes per side until golden. Transfer to a 400°F oven and roast until internal temperature reaches 145°F, about 10-12 minutes. Rest 5 minutes before serving.

Grill: Season generously and grill over medium-high heat 5-6 minutes per side until internal temperature reaches 145°F. Let that bone do the talking — rest before serving.
