Recommended Cooking: Thaw overnight in the refrigerator. Important: remove from the plastic or vacuum seal bag before thawing — this allows the scallops to breathe and gives you a much better result. Pat completely dry before cooking for the best sear.
Pan Sear: Pat scallops completely dry and season with salt and pepper. Heat a cast iron or stainless skillet over high heat until smoking. Add butter and oil, place scallops flat-side down and do not move. Sear 1-2 minutes until golden, flip and cook 1 minute more. Finish with lemon and fresh herbs.
Pasta: Sear as above and toss with linguine, garlic butter, white wine, and fresh parsley for a quick and impressive weeknight dinner.
Grilled Skewers: Thread onto skewers, brush with garlic herb butter, and grill over medium-high heat 2-3 minutes per side until lightly charred and cooked through.
