Recommended Cooking: Thaw overnight in the refrigerator. Important: remove from the plastic or vacuum seal bag before thawing — this allows the meat to breathe and gives you a much better result. For best results, season with coarse salt 24 hours before cooking and let the steak come to room temperature before searing.

Reverse Sear (highly recommended): Place on a rack in a 250°F oven and roast low and slow until internal temperature reaches 120°F, about 45-60 minutes. Pull and rest while you heat a cast iron skillet or grill to screaming hot. Sear 2-3 minutes per side in butter until a deep crust forms. Rest 10 minutes. Target 130°F for medium-rare perfection.

Grill: Grill over indirect heat until internal temp reaches 115°F, then move to direct high heat and sear 2-3 minutes per side for a perfect crust. Rest 10 minutes before slicing against the grain.
