Recommended Cooking: Thaw overnight in the refrigerator. Important: remove from the plastic or vacuum seal bag before thawing. This allows the meat to breathe and gives you a much better result.

Grill or Cast Iron: Season well or marinate for 2-4 hours. Cook over ripping high heat 2-3 minutes per side. Target 130°F for medium-rare. Rest 5 minutes then slice thin against the grain. Slicing against the grain is the key to tender skirt steak every time.
