Recommended Cooking: Thaw overnight in the refrigerator. Important: remove from the plastic or vacuum seal bag before thawing — this allows the fish to breathe and gives you a much better result.
Seared Rare: Pat dry and season with salt and cracked pepper. Heat a cast iron skillet over high heat until smoking. Sear 60-90 seconds per side — the center should remain deep red and rare. Slice against the grain and serve with soy sauce, wasabi, and pickled ginger.
Poke Bowl: Thaw and dice into cubes. Toss with soy sauce, sesame oil, green onion, and sriracha. Serve over steamed rice with avocado, cucumber, and edamame.
Sashimi: Thaw completely, slice thin against the grain, and serve immediately with soy sauce, wasabi, and pickled ginger. Keep everything cold for best results.
